Amber Cove is a purpose-built cruise port located in Maimón Bay on the northern coast of the Dominican Republic, just a few kilometres from the historic city of Puerto Plata. The port, which opened in 2015, was developed as a joint venture between Carnival Corporation and the Dominican government, transforming a quiet stretch of coastline into a full-service cruise destination. The name references the Dominican Republic's famous amber deposits — some of the finest and most varied in the world — which have yielded specimens containing ancient insects preserved for millions of years.
The port complex has been designed as a self-contained resort experience with a distinctly Caribbean atmosphere. A large freshwater pool cascading down a hillside in a series of tiered levels forms the centrepiece, surrounded by cabanas, hammocks, and tropical landscaping. A zipline soars across the bay, offering aerial views of the turquoise waters and the verdant mountainside beyond. The architecture draws on Caribbean vernacular with colourful buildings, open-air dining pavilions, and a marketplace selling Dominican crafts, cigars, and larimar — the rare blue semi-precious stone found only in the Dominican Republic.
Dining at Amber Cove embraces Dominican flavours. La Cantina serves traditional dishes including mangu — mashed green plantain topped with sautéed onions and fried cheese, a beloved Dominican breakfast — alongside chicharrones de pollo, crispy fried chicken bites marinated in lime and oregano. Fresh tropical fruit juices, rum cocktails, and the ubiquitous Presidente beer are available at multiple bars throughout the complex.
