On the western shore of the Etang de Thau — a vast saltwater lagoon on the Languedoc coast where flamingos wade through shallow waters and oyster beds stretch to the horizon — the wine town of Marseillan guards one of France's most delicious secrets. This is the birthplace of Noilly Prat, the dry vermouth that has been produced in the same waterfront chai (ageing warehouse) since 1813, its distinctive flavour derived from the local Picpoul and Clairette grapes and the particular maritime conditions of the Thau lagoon, where the mistral wind and salt air penetrate the oak barrels during 18 months of outdoor ageing. A tour of the Noilly Prat facility, with its cathedral-like halls of racked barrels and its tasting of the finished product in the courtyard overlooking the lagoon, is one of the most atmospheric distillery visits in France.

Marseillan itself is a town of quiet, sun-washed beauty that has somehow avoided the overdevelopment that afflicts much of the Mediterranean coast. The old port, where fishing boats and pleasure craft moor alongside the quay, is lined with pastel-coloured buildings whose ground floors house restaurants, wine bars, and the occasional art gallery. The Place du Theatre, anchored by a miniature Italianate theatre from 1808, serves as the town's living room — a shaded square where the morning market sets up tables of Languedoc produce: Thau oysters, muscat grapes, olive oil, and the tapenade that is Languedoc's answer to the Provencal version, made here with local green olives rather than black.

The Etang de Thau is the heart of France's oyster industry, producing over 13,000 tonnes of the bivalves annually. The oysters of Bouzigues, cultivated on tables submerged in the lagoon's brackish waters, are prized for their firm flesh and clean, mineral finish — a reflection of the unique terroir where Mediterranean seawater mixes with freshwater springs rising from the lagoon floor. Oyster tastings at waterfront cabanes along the lagoon shore, accompanied by a glass of chilled Picpoul de Pinet — the local white wine whose crisp acidity is engineered by centuries of co-evolution with shellfish — constitute one of the simplest and most perfect gastronomic experiences in southern France.

The Languedoc coast surrounding Marseillan offers a diversity of landscapes and experiences. The Canal du Midi, whose Mediterranean terminus lies at the neighbouring town of Agde, threads through the countryside in a tree-lined corridor of 17th-century engineering — its locks, bridges, and aqueducts constituting a UNESCO World Heritage Site. The volcanic headland of Cap d'Agde shelters one of the finest beaches on the Languedoc coast, while the medieval fortress-city of Beziers, set dramatically above the Orb River, provides architectural grandeur and the annual Feria that fills its streets with bulls, music, and the unfettered joy of Occitan celebration.

Marseillan is visited by Scenic River Cruises on Canal du Midi and southern France itineraries. The ideal season runs from May through October, with June and September offering the best combination of warm weather, swimworthy lagoon temperatures, and the unhurried pace that defines life on the Languedoc coast. The grape harvest in September adds seasonal energy to a town whose identity has been shaped by wine for over two millennia.
